Bauernfrühstück: The Perfect Weekend Breakfast

I don’t know about you, but breakfast is pretty essential to my day. It’s the sole factor in determining whether or not I have enough energy to make it through to lunch, and also ensures that my mood remains pleasant. But one can only have so many smoothies and bowls of granola. That’s why we’ve headed into international territory and asked Constanze Reichardt, author of the blog Seitan is My Motor, to share a traditional German breakfast recipe with us–veganized of course!

Many people think that it’s not very easy to be vegan in Germany. Breakfast alone can be hard to navigate. But over the years, vegans have come up with so many great alternatives and you really don’t have to miss out on a single traditional dish! Bauernfrühstück is one of these dishes. The literal translation of this meal is “farmer’s breakfast” because it consists of ingredients that usually come from a farm: eggs, bacon, and potatoes. It’s a simple one-pan dish which often looks like a cross between an omelette and a tortilla.

For an easy and quick vegan version, I transformed the omelette into a tofu scramble and boiled the potatoes the night before. This tastes just as good and will save you a lot of time when you wake up in the morning, starving. Enjoy it on the weekend along with a glass of juice and a cup of coffee. You can also serve it with toast.

A simple one-pan dish, this vegan version of a traditional German farmer’s breakfast takes the form of a hearty and delicious tofu scramble. Serve it with toast, juice, and coffee.

Ingredients

  • 2 T. Oil Divided
  • 13 oz. Cooked and Peeled Potatoes Cubed
  • 4 oz. Smoked Tofu Cubed
  • 1 Medium Onion Diced
  • 1 Medium Red Bell Pepper Diced
  • 10 oz. Firm Tofu
  • 1 tsp. Salt
  • 1 tsp. Paprika
  • 1/2 tsp. Turmeric
  • 2 T. Water
  • 1/4 C. Packed Chopped Parsley
  • pepper more salt to taste

Instructions

  • Heat one tablespoon of oil in a large pan.
  • Add potatoes and smoked tofu and fry for 5 minutes or until crispy.
  • Add the remaining oil, onion, and pepper and fry for 10 minutes, stirring often. Crumble in tofu, and then add spices and water. Mix well. Fry for 2-3 more minutes and remove from heat.
  • Stir in parsley and season with salt and pepper.
  • Serve immediately.
