Francisca and her husband Oscar run and operate the revered Las Lajas micro mill. These third generation coffee farmers are widely recognized for their highly differentiated processes that produce spectacular quality coffees. 30 years ago, Oscar and Francisca’s father passed away due to pesticide-caused illnesses. From then on, they knew that they needed to change the way they ran las Lajas, leaving behind their old practices for a new way of organic farming. As Pioneers, the Chacón family became one the first farming families to produce organic coffee, remaining to this day one of the only board certified organic farms in Costa Rica.
